Our wine list is designed to be a living wine list that is ever changing. The wines we choose to serve are ready to be enjoyed now and do not need to be socked away in a cellar to be drank years from now. These “live in the now” wines are a cross section of bottles from Vancouver Island B.C all the way to Spain. We aim to offer great examples of the grape varietals in the terrior where they best thrive. Both Tatum and Tracy have completed their wine training and offer a personal, table-side Sommelier to each of our guests.
Our goal is to provide quality wines that compliment Markus’ dishes; though this may seem easy, Markus’ cooking is multi-faceted and has many distinct flavors from various influences rendering this task more difficult. If you mix the influence from Markus’ mother’s spicy and rich German/Mexican fusion dishes with his extensive travel through Europe, then combine those elements with his classic European training and throw in all the wonderful west coast ingredients, you end up with a blend of flavors and textures that are his unique cooking style.
We need our wine list to offer crisp, tart wines to pair with preserved lemons, olives, tomatoes and fresh fish of Mediterranean cooking; as well as fruity aromatics for the spicy Mexican influenced dishes while still offering rich powerful wines to handle heavy meats, polentas and risottos- not to mention all the flavors of everything in between! With a small wine list this is always an ongoing, fun challenge, we hope you share our enthusiasm!
